  Chicken Clubs You may be thinking "Why do I need a recipe for a chicken club sandwich?" This extra-ordinary chicken sandwich comes with a flavourful goat cheese spread and roasted red peppers. Goat cheese spread: 11 ounces soft creamy goat cheese 3 tablespoons niçoise or black olives, finely chopped 2 1/2 tablespoons fresh basil, finely chopped 1 tablespoon capers, drained and chopped 2 1/2 teaspoons fresh thyme, chopped 2 teaspoons garlic, minced 1 teaspoon freshly ground black pepper The sandwich: 8 slices crusty French bread 8-10 ounces roasted or grilled chicken (or turkey) 7 ounce jar roasted red peppers 1 1/2 cups mixed baby greens (loosely packed) 2 teaspoons olive oil 1 teaspoon lemon juice Salt (to taste) Black pepper (to taste) Goat cheese spread: Combine all ingredients in a bowl and mix well to blend. You can make the spread ahead of picnic time, just cover it and refrigerate it until picnic day. The sandwich: Spread the cheese mixture on the bread slices. Layer
