Chicken Clubs
You may be thinking "Why do I need a recipe for a chicken club sandwich?" This extra-ordinary chicken sandwich comes with a flavourful goat cheese spread and roasted red peppers.
Goat cheese spread:
11 ounces | soft creamy goat cheese |
3 tablespoons | niçoise or black olives, finely chopped |
2 1/2 tablespoons | fresh basil, finely chopped |
1 tablespoon | capers, drained and chopped |
2 1/2 teaspoons | fresh thyme, chopped |
2 teaspoons | garlic, minced |
1 teaspoon | freshly ground black pepper |
The sandwich:
8 slices | crusty French bread |
8-10 ounces | roasted or grilled chicken (or turkey) |
7 ounce jar | roasted red peppers |
1 1/2 cups | mixed baby greens (loosely packed) |
2 teaspoons | olive oil |
1 teaspoon | lemon juice |
Salt | (to taste) |
Black pepper | (to taste) |
Goat cheese spread:
Combine all ingredients in a bowl and mix well to blend. You can make the spread ahead of picnic time, just cover it and refrigerate it until picnic day.
The sandwich:
Spread the cheese mixture on the bread slices. Layer the chicken on top. Drain, rinse and pat the peppers dry, and layer on top of the chicken.
Toss the greens with the olive oil and lemon juice, and season generously with salt and pepper. Divide greens and mound on top of peppers. Cover with top bread slice.
Please remember to keep this sandwich cool until serving time.
